Serves 3 – 4
4 chicken breasts
1 cup mozzarella cheese, shredded
3/4 cup tomato puree or passata
1 tsp herbs such as oregano, thyme and or tarragon
Pinch unrefined salt & freshly ground black pepper
Step 1 Preheat oven to 190 degrees celsius. Cut the chicken breasts in half to create a pocket (avoid slicing all way through). Place in a casserole baking dish.
Step 2 Put tomato puree, some of the cheese, herbs, salt and pepper inside pocket created in chicken. Fold closed and add same topping on top.
Step 3 Bake for around half an hour or until chicken is cooked through.
Optional additions – sliced olives, capers, anchovies, baby spinach leaves, etc.
