Healthy Chicken Nuggets

Cooking Time: 15mins

 

Ingredients 

3 free range chicken breasts

2 eggs, lightly beaten

1 1/3 cup almond meal

1/3 cup tapioca flour

3 Tablespoons sesame seeds

1 Tablespoon garlic powder

1 Tablespoon onion powder

Crack of black pepper and pinch unrefined salt

Virgin coconut oil (or extra virgin olive oil)

 

Directions

  1. Using meat hammer, smash out chicken breasts until they are around 1cm thick and cut into small bite size pieces.
  2. Mix all dry ingredients in a bowl.
  3. Beat eggs in a bowl and coat chicken pieces in the egg mix and then roll in the dry mix.
  4. Shallow fry in a pan with oil until golden on both sides.
