STEAK WITH BBQ PUMPKIN, SPINACH & FETA SALAD
4 x 150 – 200g poterhouse steaks
1kg butternut pumpkin, cut into thin slices
200g baby spinach
2 red onions, cut into wedges
1.5 tbsp red wine vinegar
2 tsp wholegrain mustard
40ml extra virgin olive oil
Unrefined sea salt and cracked pepper
Step 1 Preheat BBQ on medium heat.
Step 2 Season slices of pumpkin with olive oil, salt and pepper.
Step 3 Cook pumpkin slices on BBQ for a minute or so each side. Remove from BBQ. Cook onion wedges on the BBQ for a few minutes, or until softened. Remove from BBQ.
Step 4 On a serving dish evenly lay out the cooked pumpkin and onion together with the spinach and feta.
Step 5 To make the salad dressing, mix the mustard, vinegar and oil in a small glass jar and shake until you get a creamy consistency. Serve over the salad. Reserve some of the salad dressing.
Step 6 Use the remaining salad dressing to marinate your steak. Cook steak on grill to your desired taste.
