Chicken Nuggets with Tomato & Avocado Salad

Serves 2 – 3


3 chicken breasts

2 eggs, lightly beaten

1 1/3 cup almond meal

1/3 cup tapioca flour

3 tbsp sesame seeds

1 tbsp garlic powder

1 tbsp onion powder

Crack of black pepper and pinch of unrefined salt

Extra virgin coconut oil (or extra virgin olive oil)


Step 1 Using meat hammer, smash out chicken breasts until they are around 1cm thick and cut into small bite size pieces.

Step 2 Mix all dry ingredients in a bowl.

Step 3 Beat eggs in a bowl and coat chicken pieces in the egg mix and then roll in the dry mix.

Step 4 Shallow fry nuggets in a pan with oil until golden on both sides.



1 avocado, chopped

2 tomatoes, chopped

1⁄4 cup red onion, diced

1 tsp lemon juice

1 tbsp apple cider vinegar

1 tbsp extra virgin olive oil

Crack of black pepper and pinch of unrefined salt


Step 1 Put all chopped and diced veggies in a big salad bowl.

Step 2 Drizzle olive oil, apple cider vinegar and lemon juice over top, crack fresh pepper and salt and gently toss to combine.
